About Us

About our Team

The staff at Baja Cooks is made up of locals who love serving groups making an impact in their very own communities.  Most of our staff have been with us for over 10 years!

Eugenio Morales (Eugene)

Eugene joined the Baja Cooks team in 2009. He is our operations manager and oversees all the equipment and logistics for the groups we serve. He loves meeting missioners from all over the United States and Canada and takes great pride in making sure groups are well fed.  Eugene was born and raised in Mexico City but now enjoys the slower pace Baja has to offer.   He loves going to be beach and watching baseball.

Sarai Medrano

Sarai is our head cook and has been with Baja Cooks since 2004. She has 4 daughters and 7 grand kids.  Her and her husband Rogelio of 44 years are both involved with their local church Iglesia Presbiteriana Reformada.  She loves working for Baja Cooks because it gives her the opportunity to serve those helping in her own community.  Nothing brings her more pleasure than watching people eat the food she prepares.

Toño Villanueva (Tony)

Tony joined us in 2019 and is the newest member of our team. He is married to Gabriela and they have 3 children. During the off season he works as an Uber driver in Mexico City. Next year Tony and Gabriela plan on leaving the big city behind to live in beautiful Baja full time. Tony’s hobbies include going to the beach, classic rock, and watching football and soccer.

Edith Mayorquin

Edith has been part of the Baja Cooks team since 2007.   She is an excellent cook and loves serving food to groups serving in her own community.  She was born in the state of Nayarit, has 6 children and enjoys spending time with her family.  During the off season Edith works at the Dart plant in Tijuana.

Daniel Mojica (Danny)

Danny is a very energetic youngster who came to us back in 2011. He used to live right across the street from Amor Ministries old camp “The Vinyard”. He is a very hard worker who helps with the setup, maintenance and take down of all our tents. Danny’s hobbies include soccer and drawing.

Frank Fernandez (Franky)

Frank joined the team in 2013 and is our assistant Food and Equipment Manager.  He helps with food purchasing and makes sure all of our equipment is up and running.   Frank’s hobbies include running and soccer.

Luchacky Chacón (Lucy)

Lucy is a mother of five wonderful kids and a great cook just like her mother. She came to us in 2007 and calls Baja Cooks her second home. When asked what she loves about working at Baja Cooks she says, “It gives me great pleasure serving people of different ages, backgrounds and customs that all have one goal in common, helping families that need it the most.”

Margarita Garzón (Maggie)

Magi started back in 2014 and really embraces “being a part of a great team” she says.  She is the youngest of 5 siblings.  Like many other girls in Mexico, Magi is an excellent soccer player.  She loves the fact that she is serving people that help families in the community she lives in.

Elizabeth Garzón (Liz)

Liz is one of Sarai’s granddaughters and has been with us since 2014. At the age of 6 Liz used to come to watch her grandma work and learned a lot by watching. She has been a great team player and truly enjoys the friendly work environment. She loves to see the groups we serve helping the people who need it the most. Liz enjoys playing soccer and watching baseball.

Laura Garzón

Laura started in 2014 and has been a great addition to our kitchen staff. “I wouldn’t work anywhere without a family ambiance as part of the work environment” she says. She loves to see how people get together every year to come to make a difference in her very own neighborhood. Seeing how happy people are in their last day prior to going back across the border “is a great thing to watch” a unique experience.

Carlos joined the Baja Cooks Team in late 2008.  Our former Operation’s Manager and now personal Food & Beverage consultant holds a culinary degree from the American Culinary Federation.  He is also ServSafe Certified by the National Restaurant Association.  Carlos has been a remarkable source of information to our kitchen staff.
