COVID-19 Response

This season (2021) Baja Cooks is taking the spoon by the handle! All menu items you are used to, including all specialty items for dietary restrictions, will continue to be available and served cafeteria style. Please continue to reach out to us with any questions you might have.

For over 2 decades, Baja Cooks has prepared and served food to over 700 mission trip groups serving in Mexico on short-term mission trips.  This past year, like you – our world changed due to Covid-19.  2020 was an extremely difficult year for us and our hearts and prayers go out to all the ministries working in Mexico and beyond.   We missed serving all our groups last season but wanted to assure you that when you are ready to return, we will be ready for you.  We will address any safety-related concerns but wanted to assure you we are working hard to provide the safest environment possible.

Some of our food operations will be handled differently this year to minimize the potential risks due to Covid-19.  Below are some of the measures we will be taking to ensure the safety of both our staff and the groups we serve:


  • We will be switching from a self-serve buffet-style spread to one in which staff will be serving the food. (Cafeteria style)
  • Sneeze guards will be set up on all the food lines
  • Bulk condiments will be replaced with individually wrapped condiments
  • Only a specified number of people will be allowed at the food lines at any given time to encourage social distancing
  • All group participants will be required to wear a mask around the food lines and beverage station


  • Additional hand sanitizing stations will be set up around the food lines
  • All equipment will be cleaned and sanitized prior to each meal
  • Food preparation surfaces will be cleaned and sanitized before and after every meal


  • All employees will wear face coverings and gloves when preparing and serving food
  • We will continue to follow proper hand washing and hygiene techniques
  • All staff will have their temperatures checked prior to their work shift and evaluated for any signs of illness
  • Any employee with elevated body temperature, cough, or other signs of illness will be required to stay at home

The health and safety of the group participants and the Baja Cooks staff are a primary concern to us and we hope these measures will put some of your food concerns at ease.  We will continue to brainstorm ways to make your mission trip as safe as possible and always welcome any feedback.  We cannot wait to get back to work for you.
